Quick and Easy No Bake Cookies

These no bake cookies are quick, easy, and require very few dishes. They freeze nicely and you can eat them right out of the freezer as well.

I have a sweet tooth. I don’t often keep sweets in our house because of this. But sometimes I just need something sweet and usually I need it quickly. These cookies are perfect because they are so quick to make and they freeze so well. I usually have all these items in my house, so that is also a positive. They are perfect to make quickly when we have unexpected visitors for supper as well.

Ingredients:

  • 1 stick of butter
  • 1 1/2 cups sugar *see note below
  • 1/2 cup milk
  • 1/2 cup cocoa
  • 1/2 cup peanut butter**see note
  • 1 1/2 tsp vanilla
  • 3 1/2 to 4 cups of oats (I use old fashioned oats)***see note

How to make:

  1. Melt 1 stick of butter in a large microwave-safe bowl.
  2. Add 1 1/2 cups sugar, 1/2 cup milk, and 1/4 cup cocoa to melted butter and stir together
  3. Place bowl back in the microwave for 2 minutes. Remove bowl and stir.
  4. After you stir it together place back in microwave for 1-2 minutes or until most of the sugar is melted.
  5. Add in peanut butter and stir well.
  6. Place back in the microwave for 1-2 minutes or until peanut butter is melted and sugar is melted.
  7. Add in 1 1/2 tsp vanilla and stir.
  8. Add in 3 1/2 to 4 cups of oats (depending on how messy/sloppy you want the cookies. I like mine a little more formed. So I usually do closer to 4 cups)
  9. If I have time, I let to mix sit for 10-15 minutes on the counter so the oats can soak up some of the liquid.
  10. Drop a spoonful of cookies onto a cookie sheet or wax paper at whatever size you would like.
  11. Place cookies in the fridge or freezer for 30-60 minutes or until they are set. You really can eat them at any point. They will just be softer if you don’t let them set for at least 30 minutes. If they aren’t set, I usually put them on top of ice cream and it is delicious!

*My mom makes this recipe and she uses 2 cups of sugar. I try to cut down on sugar as much as possible. So I use 1 1/2 cups and it works just fine. You can certainly use 2 cups if you like it a bit sweeter.

**You can adjust the amount of peanut butter you like to your taste. I like it a bit more peanut butter flavored. So I usually add a bit more than 1/2 cup.

***The amount of oats you use might need to be adjusted slightly based on the amount of sugar/peanut butter you use. I usually start with 3 1/2 cups and just add it in slowly as it needs. If it looks soupy or like there is a lot of liquid, I would add in a bit more oats. It should be soft and all the oats should be well coated in the chocolate mixture.
